Vietnamese cabbage salad

You can easily play around with this salad adding other vegetables such as beetroot, fresh mint, basil or coriander along with chicken or tofu- the basic principle of crunchy shredded cabbage, peanuts and a spicy dressing is always a winner
- Start by making the dressing. Mix the juice of 1/2 a lime, 2tbsp vinegar, 1tbsp toasted seasme oil, 1 tbsp brown sugar,2 teaspoons grated ginger, a crushed clove of garlic, a good pinch of sea salt (or soy sauce) and pinch of cayenne pepper.
- Wash and shred one whole bag of cabbage or kale, grate 2 medium carrots and finely slice a quarter of one onion or a bunch of spring onions.
- Toss together and then pour the dressing over it all.
- To serve sprinkle with a handful of lightly crushed roasted peanuts.
