Vietnamese cabbage salad

You can easily play around with this salad adding other vegetables such as beetroot, fresh mint, basil or coriander along with chicken or tofu- the basic principle of crunchy shredded cabbage, peanuts and a spicy dressing is always a winner

 

    • Start by making the dressing. Mix the juice of 1/2 a lime, 2tbsp vinegar, 1tbsp toasted seasme oil, 1 tbsp brown sugar,2 teaspoons grated ginger, a crushed clove of garlic, a good pinch of sea salt (or soy sauce) and pinch of cayenne pepper.

 

    • Wash and shred one whole bag of cabbage or kale, grate 2 medium carrots and finely slice a quarter of one onion or a bunch of spring onions.

 

    • Toss together and then pour the dressing over it all.

 

    • To serve sprinkle with a handful of lightly crushed roasted peanuts.

  • 1 bag mixed cabbage or kale
  • 2 medium carrots
  • juice of 1/2 a lime
  • 2tbsp brown rice or cider vinegar
  • 1 tbsp toasted sesame oil
  • 1tbsp brown sugar
  • 2 tsp grated ginger
  • 1 clove garlic, crushed
  • cayenne pepper
  • salt or soy sauce
  • 1/4 onion or a bunch of spring onions
