Cabbage and cheese colcannon

This works really well with kale, cabbage and broccoli, just remember to remove any tough stalks as they will jar a little with the smooth texture of the mash.
- Start by washing and trimming a big handful of your greens and finely shredding them. (If using broccoli, one smal head will be enough, diced finely)
- Boil in a little water until just soft and then remove from then drain and set aside.
- Peel and evenly cube 1kg potatoes and boil in salted water until soft
- Drain the potatoes an then mash with a handful of grated cheese, salt, pepper, butter and 100ml warm milk.
- If you have some spring onions, these taste grate finely chopped and stirred in to the mash.
- Serve with sausages and gravy. If you have any left over, they make great potato cakes if you form into patties and dust with flour before frying
