Stir Fried Patty Pan with Indian Spices

Cut the patty pan in half and scoop out the seeds. Cut the halves into wedges. Heat a frying pan and add a splash or sunflower or vegetable oil (or ghee) add the garlic, ginger and chilli followed by the spices and then add the patty pan with a squeeze of lemon. Stir fry for 2 minutes, taste and add more lemon, salt or spice to your taste. Serve with chopped fresh coriander.
