Raw Patty Pan Salad

Patty pan taste great raw and you can use a mix of patty pan and courgettes for this if you like.
Slice off the stall and the base of the squash and scoop out most of the seeds. Using a peeler or a mandoline carefully slice the squash and courgettes into very thin strips. Immediately add a dressing made by whisking together the juice and zest of a small lemon with the honey, olive oil, vinegar and salt and pepper. Add the spinach or watercress and any herbs that you fancy.
