Kohlrabi, radish and avocado ceviche

Method:
Slice the kohlrabi, radishes, fennel and avocado as finely as you can (using peeler or mandolin can make this easier). In a bowl whisk together the lime juice, zest, chilli and salt and sugar to taste. Dress the vegetables with the lime mixture and leave to stand for ten minutes before serving with a garnish of chopped coriander.
