Veg of the month: Spring Greens

These young tender cabbages belong to the brassica family alongside kale, broccoli and Brussel sprouts. Their health benefits and versatility make them the perfect all-rounder.

The vibrant Spring Greens in your weekly box are sown, grown and harvested by partner growers Francis Sampson and Plowright Organic, whose farms are based in Penzance and Somerset.

Super Food
Spring Greens are brimming with Vitamin C, which supports the immune system, and vitamin k, which builds bone strength. They contain compounds said to protect against heart disease and stroke, as well certain types of cancer. These winter-hardy veg are sown in July and August and harvested just in time to provide a much needed 'lift’ to our plates after months when root veg have dominated.
The sweetest things
As young plants, Spring Greens are sweeter than more mature varieties of cabbages. They've yet to develop the hard heart, so their leaves can be wilted in minutes. To get the best flavour, refrigerate and consume as close to delivery day as possible.

Versatile veg
Gone are the days of tasteless, over-boiled cabbage! Here at The Farm we use our Spring Greens to add a streak of vibrancy to the gorgeous soups, stir-fry’s and stews we cook on-site for our events and Community Farmer Days. They can be served whole or shredded. Their sweet taste lends them to lighter spring and summer cooking than the harder cabbages we associate with winter.
