Winter slaw with parsnips

In a large bowl, mix together a grated parsnip and carrot with shredded or grated cabbage.
Dress with juice of half a lemon and seasoning, plus olive oil or mayonnaise, yoghurt or tahini if you like.
Add some apple, raisins or sultanas for sweetness, or dried cranberries for a little sourness.
Add seeds or toasted nuts and any herb you have: dill, chives and parsley all work well.
