Sweetcorn fritters

This is a recipe that works well with corn that is less fresh of even frozen or tinned sweetcorn.
- If using corn from the cob, grill it for 15 minutes or until tender. Leave to cool and then carefully cut the kernels from the cob.
- In a bowl mix 100g plain flour (use gram if you want it to be gluten free) with 1 beaten egg and 75ml of milk to form a loose batter. Add more milk if it seems very thick.
- Season with salt, pepper, a pinch of sugar and some chilli powder.
- Mix the sweetcorn into the batter and carefully drop spoonfuls into a pan with a good layer of hot oil in. Turn once so the fritters are golden on each side.
- Keep the fritters warm in the oven while you cook the whole batch.
- Serve with sweet chilli sauce and sliced spring onions or smoky bacon and a good quality tomato salsa.
