Sanderson's seasonal roasted apple with red cabbage

- Cut the apples into quarters, take the seeds out.
- Put the apples in a tray with 1 tsp of butter and roast for about 15 minutes in a pre-heated oven (200 C), after this first fifteen minutes, add the brown sugar or honey and leave until the apples have caramelized ( nice brown colour). In the maintime, take a frying pan, add the other 2 tsp of butter and the red cabbage, vinegar, salt and pepper, and cook on a low heat until soft but not over cooked, keep a little crunch. Mix in the apples, mustard seeds and serve warm.
- Can be a side dish to compliment duck, goose, pork, etc... Or just can eat as a vegetarian dish. If you don't have red cabbage normal cabbage or cavalo nero can be used.
