Romesco with Romanesco!

Romesco is a Spanish sauce similar to pesto.
Method:
Cut the Romanesco into florets with as long a stem as possible. Drizzle with olive oil, season and roast for 15 minutes until soft. In a pestle and mortar, or a food processor, grind the garlic clove, tomatoes and red pepper. Add the almonds and keep grinding until you have a dip consistency. Tear the bread and add to the sauce - keep grinding! Add a little lemon juice, sugar, paprika and season to taste. Serve the Romesco dip in a bowl surrounded by the roasted Romanesco.
