Red cabbage with dates, star anise and dark chocolate

- An interesting recipe to make the most of the red cabbages (from our own field) which are appearing in some of the boxes this week.
- Begin by coring and finely shredding your red cabbage. Take a large heavy bottomed pan and melt the butter and oil in it over a medium heat. Finely slice your onion and add to the butter, along with the star anise and orange zest, and leave to soften for five minutes. At this point, add the red cabbage, and stir well before adding the port to reduce down. Once the port has reduced down to a thick consistency, add the water and cover, leaving over the heat for twenty minutes.
- After twenty minutes, add the chopped dates, cover and continue to cook for a further ten to fifteen minutes. Before serving, take out the star anise and set aside. Grate 50g of really good quality dark bitter chocolate into the red cabbage and stir through until melted down.
- Leave on a low heat or in a low oven until needed.
