Quick and easy black bean chilli

Method
Fry the onions until soft and starting to caramelize (roughly 15 minutes). Add garlic, chilli and spices and stir for a further 2 minutes. Stir in peppers, beans, bay leaf, courgette, tomatoes, lime and sugar. Simmer for 20 minutes. Season to taste. Serve with rice, flour tortillas and grated cheese. For an extra special meal add salsa, sour cream, and avocado slices or guacamole.
