Potato and fennel bake

- Wash the potatoes and cut into slices the thickness of a £1 coin before putting into a bowl filled with cold water.
- preheat oven to 200C
- Top and tail the fennel bulb and cut into thick slices. Put your fennel slices in a roasting tin with the lemon and sliced garlic.
- The potatoes should have turned the water millky white by now so drain and rinse before adding to the roasting tin. Season and cover with a generous amount of olive oil before baking in the oven for 30-40mins
