Parsnip Crisps

Slice off the ends of the parsnip then use a sharp peeler to take strips off of it so that you have a pile of long parsnip shavings. Add a little splash of oil and salt and pepper; you can also add a sprinkle of any spices you like such as smoked paprika, chilli or Indian spices. Take the largest baking tray you have and spread the parsnip over the whole area so that there is a single layer. Place in a hot oven (180c gas mark 5) and cook for 5 minutes, then move the parsnip around and repeat until the parsnip is crispy and golden. Serve as a nibble or a garnish for a meal.
