Cumin carrots

Cumin and carrots is as classic a combination as coriander and carrots with the cumin adding an earthiness to the sweet carrots.
- Simply clean and cut the carrots into even batons or rounds before adding to a pan with just enough water to cover them.
- Add a pinch of salt, pepper and sugar to the water and boil just tender with the lid on the pan.
- In a separate frying pan heat a knob of butter until bubbling but not burnt and add a teaspoon of cumin seeds to the butter to release their oils, this should take about ten seconds.
- Add the cumin and butter mix to the carrots and continue to heat with the lid off until all the water has evaporated.
